Apples

Our neighbour came over with two very large buckets of apples the other day… There are a lot of apple trees on the public footpath between our house and his, but these were from his garden.  They are old trees and no chemicals are used on or near them. There must be at least three different sorts; some of them are rosy and sweet and really delicious. Others are a bit sour, but crispy and fresh-tasting.

Since I’m not entirely sure how long they will keep I’m intending to use a lot in crumbles etc. I’m especially looking forward to making one of my favourite cakes based on a recipe from none other than 101 Cookbooks. Heidi Swanson’s Unfussy Apple Cake is a simple and nutritious treat. I love it fresh out of the oven best, slightly undercooked, and then (if there’s any left!) heated up the next day with a dollop of cream or crème fraiche. I adapted it a little, and used half wholemeal, half self-raising flour, and only 1 tsp baking powder. ( I have also made it with rhubarb… yum!)

I first discovered 101 Cookbooks a couple of years ago and was delighted to finally find someone who cooks great vegetarian food that is not only healthy, but tasty too!
