River Cottage Veg Every Day!

After seeing this guy on TV in the UK last November (see my post on him here) his latest book went on my Christmas list…

I wasn’t disappointed!

There is so much to try, I don’t know where to begin! All the recipes seem so simple; quick, using normal ingredients, with easy instructions, nothing “fancy”, and yet the combinations are ingenious.

A few examples to show what I mean: pea and parsley soup, squash and walnut toastie, beetroot and walnut hummus, or sweet potato and peanut gratin… not to mention the infamous chocolate and beetroot ice cream!

The message is “Eat more veg!” and the recipes are convincing enough to get anyone into that kitchen chopping and dicing! The book oozes energy and enthusiasm. One thing I particularly like about it is the variations suggested in some of the recipes. The clear organisation of the recipes in the book is also a major plus point.
