Do you have a favourite pudding?

Banoffee pie, fruit crumble, pavlova, strawberries and cream…. I couldn’t narrow it down to one, but I have always loved pineapple upside down pudding…

Mum used to serve it with Carnation milk, the centre just slightly soggy, the way we liked it! It’s the kind of dessert that simply epitomises home-cooking… I have never seen it on a restaurant (or even pub) menu.

This version was good – a vegan one from The Vegan Table by Colleen Patrick-Goudreau – but not quite as perfect as Mum’s recipe! Nevertheless, it disappeared fairly quickly!
