I mentioned recently that I am not a great fan of cooked cabbage, but love it raw. So I decided to try out a few coleslaw recipes to brighten up our winter table. And they certainly are bright!
My original one is quick, simple and delicious. The only drawback is all that mayonnaise! Still, we need a bit of extra fat in this cold weather for insulation…
(If you have a food processor use it to) Grate approximately 3 cups red cabbage (1/4 of a medium cabbage), 2 carrots, and 1 onion
Add 3 large tbsps mayonnaise, 1 tbsp sunflower oil, 1 tbsp white wine vinegar, a sprinkle of salt and plenty of black pepper. Mix well and serve immediately.
My next version is a bit healthier… just an oil/vinegar dressing and some extra nutrients in the form of crunchy peanuts. They really add a bit of bite and a complimentary flavour.
Grate 2 cups white cabbage, 2 small carrots, and 1 red onion. Mix in 2 handfuls of unsalted peanuts, chopped.
Add 1-2 tbsp olive oil, 1 tbsp white wine vinegar, 2 tsps maple syrup (or a pinch of sugar), a sprinkle of salt and lots of black pepper. Mix well and serve immediately.
The last one is a cabbagey version of Waldorf Salad. (Did you know the original Waldorf Salad did NOT have walnuts in it!) This is my current favourite!
Grate 2 cups white and/or red cabbage, 1 carrot, 1 small crispy apple (not peeled, and red if possible), and 1 small red onion. Mix in 1 handful of chopped walnuts.
Stir in 4 tbsps plain yoghurt, 2 tsps lemon juice, salt and pepper, and a pinch of ground ginger. Mix well and serve immediately.
