A recipe for Cheesy Feet!
(or in Bavarian: Kaasfiaß)
For cheese lovers these are a must! (Especially for guests!) They are just so corny!
The idea came from a Bavarian TV programme, but the recipe is my own.
You will need:
- 125g strong white flour
- 125g plain flour (I used 75g white and 50g wholemeal)
- ½ tsp instant dried yeast
- 165 ml lukewarm milk or water
- 1 tsp salt
- 2 tsps olive oil, plus a little extra for oiling
- grated cheese, such as a strong cheddar or emmental, parmesan, etc
- 2 tsps fresh or dried chopped herbs (optional)
- 1 egg yolk
- Foot-shaped cookie cutter (see picture below)
Put the two flours into a large bowl with the salt and yeast. Mix well. Add the oil and warm milk and mix to a rough dough. Flour your hands a little. Tip out the dough on to a work surface and knead rhythmically for 5–10 minutes, until smooth.
Trickle a little oil into a clean bowl, add the dough and turn it in the oil. Cover with a tea towel and leave in a warm place to rise for about one hour. When the dough is well risen, tip it out and ‘knock it back’ until it collapses. Roll out to about 0.6cm thick and cut out feet with cookie cutter.
Place on a baking tray and leave to rise again for 10 minutes. Brush with egg yolk. Bake at 150°C for about twenty minutes. Remove from oven and quickly slice each foot lengthways, from heel to toes, trying not to slice quite through at the end. Sprinkle base generously with grated cheese. Put tops on again and sprinkle with a little more cheese (and pepper) and return to oven for another 10 minutes.
Depending what cheese you use, they smell really cheesy! (I used “Bergkäse” – Bavarian mountain cheese- and parmesan)
Not only novel, but also absolutely scrummy!
