(Actually he isn’t looking as grumpy as usual on this photo!)

Leek and Potato Soup

LeekPotatoSoup2

  • 2 tbsps olive oil for frying
  • 3 leeks, cleaned and trimmed and thinly sliced
  • 3 medium potatoes, peeled and cut into chunks
  • 2 onions, sliced
  • 1.75 pints/ 1 litre vegetable stock
  • 2 tsps mixed dried herbs
  • salt and black pepper

In a large pan, sautΓ© the leeks and onions for five minutes, then add the potatoes and turn the heat to low. Cover and leave to “sweat” for 10 minutes. Now add the stock and seasoning and bring to a simmer, but do not boil. Simmer gently for about 15-20 minutes, until the vegetables are all tender. Puree and serve immediately with a sprinkling of black (and pink) pepper or a swirl of (soya) cream.

  1. Perfect! Thank you! All I need now is the teddy bear and the microwave. Somehow the cat never manages to get the whole “give me a warm cuddle now” thing, unless it’s for her, of course…

  2. Hope the sky is blue for you today Cathy! Sunny here this morning, but there’s rain forecast for later so I might need a bowl of your soup before the end of the day!

    • The sun tried very hard again, but was only briefly visible as a watery disc in a grey sky…. Now the snow is melting I can imagine spring again, which always seems an impossibilty at this time of year!

  3. Much better, thanks! The teddy bear doesn’t look grumpy; he looks as if he just wants you to move him closer to the soup so he can actually eat it πŸ˜‰

  4. I love, love, love this!!! Just the thought of it is cheering me up! πŸ™‚ Grumpy ted looks so cute!!! I love Leek & Potato soup. Just what the doctor ordered πŸ™‚ Great post! Thank you for cheering us all up!
